CHARDONNAY
Chardonnay grapes hail from the Burgundy area of France where their vines are the most numerous of all the varieties planted. They’re the only grape permitted in the Chablis region and the Chardonnay grape is also the major varietal used in making Champagne. Its winter hardiness is legendary and can withstand severely low sustained temperatures of -20 to -25C, hence its popularity in Ontario. The first Canadian Chardonnay was produced in 1979 but only became a staple in Canadian wine industry in the last ten years

PINOT GRIGIO
Pinot Grigio is the Italian name for Pinot Gris, a French grape. Although it yields a fruity, dry white wine, Pinot Gris is actually a red grape, with skins ranging in color from bluish gray to brownish pink. Researchers have determined that Pinot Gris has a remarkably similar DNA profile to Pinot Noir and that the colour difference is derived from a genetic mutation that occurred centuries ago.

SPARKLING APPLE CIDER
Made from organic Ontario apples using the traditional Normandy method, combined with an Argentine style, our cider is more akin to a delicate champagne than a robust cider. Called Sidra in Argentina, it is traditionally consumed only during the holiday season, but we enjoy this cider all year long. Pure taste of fresh apples combined with the finest bubbles, some have called it “Nectar of the Gods”.

ICE WINE
Ice wine is a type of dessert wine produced from grapes that have been frozen while still on the vine. The sugars and other dissolved solids do not freeze, but the water does allow for a more concentrated grape must to be pressed from the frozen grapes resulting in a very sweet wine. Despite it’s sweetness it can be refreshing due to its high acidity. Depending on the year our ice wine can be from Riesling, Vidal or Cabernet Franc grapes.
